First it was Mainland donut king Krispy Kreme, then Osaka-based Beard Papa. What's a small, family-owned bakery to do? Answer: Keep; on kicking buttery butt. Their fluffy, sugary donuts ($.60) are as light as air and as big as your hand. The cream puffs ($1.20) are unapologetically rich, buttery and, well, creamy. Go early. These baked goods move fast. hamura's lilikoi chiffon pie
If there's a lighter-tasting (or just lighter) pie in the state, we haven't tasted it. The slightly sweet, slightly tangy lilikoi treat ($11) is made from Kauai passion fruit juice, eggs and sugar and is whipped through and through, from its puffy filling to its frothy topping. Sold since 1989, the pie isn't quite as old as the Kauai saimin stand's noodles, but it is nearly as beloved. Hamura Saimin, 2956 Kress St., Lihue, Kauai, 245-3271.

Fruity and syrupy sweet on the inside and flaky and crispy on the outside, Zippy's Napples turnovers are always delicious and always available, on hand at all 23 Zippy's locations, as well as on the Web. Eating Kanemitsu Bakery's Bread right from the oven might be one of the Islands' most sublime culinary experiences. However, buying the bread, on sale from 10:30 p.m. to approximately 3 a.m. in a dimly lit alley behind the bakery, may be just as exciting an encounter. The loaf comes with a choice of five different toppings: cream cheese, butter, blueberry, strawberry and cinnamon. From $3 to $4.75.
