Tom Purdy loved eating cooked taro with a dollop of ranch dressing. Unfortunately, it wasn’t the healthiest thing in the world, so he threw smoked taro in a blender to make a salad dressing. It turned out to have better appeal as a dip. Now two years strong, Taro Delight offers five flavors of dips (from a spicy green Thai chili flavor to sundried tomatoes), two mustards, smoked taro poke and salad. Taro Delight products can be found at the weekly farmers’ markets at Kapiolani Community College and Kailua, Whole Foods Market and Tamura’s in Kaimuki. The dips can still be used as originally intended — just whisk together with olive oil and vinegar in a mixing bowl for creamy dressings.
