Downtown’s Best Pau Hana Drinks

To dispel Downtown Honolulu's sleepy after-hours image, two stalwart Hawaii Business editors hit the streets to highlight establishments that excel after the close of the business day. For our readers, we performed hours of exhausting research (you should see our expense report) to reveal the best pau hana drinks.

Indigo's Strawberry Lychee Martini

Indigo mixologists conjure this tropical spirit with Skyy vodka, fresh Island lychee juice and a dash of strawberry liqueur. Can't beat a garnish of three skewered lychee. Then, for the thirsty, there are 24 other martinis to sample. $2.75, All Martinis, Happy Hour. 1121 Nuuanu Ave.

Palomino's Classic Mojito

Bartenders make this traditional Cuban cocktail with "Scarface" flourish. First, they drown freshly torn mint leafs in Cruzan rum, handmade lime sour and soda water, then "vigorously shake" your little mojito. Mucho gracias. $6.75. Harbor Court Mezzanine, 66 Queen St.

Mercury's Hollywood Hunny

Chances are you've never heard of the obscure, honey-flavored liqueur Baeren Jager. And odds are even greater you've never experienced it Mercury-style. Bartenders mix the syrupy alcohol with Triple Sec, a squeeze of fresh lime and a splash of 7-up, resulting in a tasty concoction that's not too sweet, not too sour, but juuust right. $6. 1154 Fort Street Mall.

Hank's Hankover'd

One day, eight months ago, proprietor Hank decided he needed a signature drink. After a little trial and inebriation, he poured Kona coffee liqueur on a layer of Irish cream on a layer of sour apple schnapps, and his staff decided "that was good." We suspect they all had serious hangovers the next day and promptly named the drink. Patrons keep the signed shot glasses. $8.50. 1038 Nuuanu Ave.

Bar 35's Chimay Beer

Chimay is brewed by Trappist monks in the hinterlands of Belgium. Their Web site says the monks are dedicated to God and products that "gladden the heart of man." Amen, bruddhas, Amen. $3.50, Happy Hour. 35 N. Hotel St.
